Recipe: Applesauce Oatmeal Muffins From: anonymous


1 1/2 cup Quaker oats (quick or old-fashioned, uncooked)
1 1/4 cup flour
3/4 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 cup unsweetened applesauce
1/2 cup skim milk
1/2 cup firmly packed brown sugar
3 T. oil
1 egg white

Heat oven to 400 degrees. Line 12 muffin cups with paper baking cups (or spray with Pam). Combine first 5 ingredients. Add remaining 5 ingredients and mix just until ingredients are mixed. Fill muffin cups almost full.

1/4 cup Quaker oats
1 T. packed brown sugar
1/8 tsp. cinnamon
1 T. melted maggarine

Combine the last 4 ingredients and sprinkle over batter. Bake 20-22 minutes or until golden brown. Serve warm. (Low Cholesterol, Low Sodium)
