Recipe: Sweet Potato Pudding Pie From: Kellye Van Dyke

3 Medium sweet potatoes or one large can drained
1 cup of sugar
3 tbs. of self rising flour
2 tsp. of baking powder
1/2 tsp. of salt
2 eggs
1 tsp. of cinnamon
1 small can of carnation evaporated milk
3 tbs. of margarine

Preheat the oven at 350 degrees. Mash the potatoes with butter, add flour, salt, baking powder, cinnamon and stir together. Add beaten whole eggs, stir in milk last. Bake in Iron skillet (9") well greased and sprinkle flour on bottom of the skillet. Bake for one hour at 350 degrees, middle rack of oven. After the pie is done let cool almost completely until warm. Turn upside down on large plate. I usually eat it warm it taste better that way and with cool whip.

My recipe is a old southern Sweet potato pie recipe that makes its own crust and it is so easy to make. I really enjoy recipes, thank you for giving me this opportunity to share mine.
