1-1/2 cups all purpose flour 1 cup oats, uncooked 1/4 cup granulated sugar or 6 packets of Sweet 'N Low 2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt (optional) 8 oz. can crushed pineapple in juice, undrained 1/2 cup skim milk 1/3 cup mashed ripe banana 2 Tbsp. vegetable oil 1/4 cup egg substitute or 2 egg whites 2 tsp. vanilla Heat oven to 350F. Grease and flour and 8x8 in. square pan. Combine dry ingredients and mix well. Set aside. Blend pineapple, milk, banana, egg substitute, oil and vanilla until mixed thoroughly. Add to dry ingredients, mix until just moistened. Pour into prepared pan. Bake 45-50 minutes or until golden brown and cake tester inserted in center comes out clean.
