Recipe: Chicken and Sausage Jambalaya From: KC80sing@aol.com


4 chicken breast, cut up
1 lb. smoked sausage, cut up
1 yellow onion, chopped
1/4 to 1/2 c oil
1/2 bell pepper, chopped
1 clove garlic, minced
1/2 c green onions chopped
2 Tbsp cajun seasoning
2 c rice
2 1/2 cups hot water
1 celery stalk, chopped
2 chicken bouillion cubes
salt & pepper

Season chicken and brown in oil. Add sausage and vegtables. Cook until vegtables are wilted. Add the rest of the ingredients and bring to a boil. Lower heat to the lowest level and cover. ( Don't peak for at least 20 min.) Open and fluff rice. This is very versatile. You may add chopped ham or shrimp. You can decrease water by 1/4 and add 1/2 cup stewed tomatoes. If you want it spicer, add sliced hot peppers.
