Recipe: Baked Bass with Bacon From: Dan Paschal
Tennessee


6 bass, cleaned
1/2 cup cornmeal
1 Tbsp flour
6 slices bacon
1 1/2 tsp salt
pepper to taste

Clean & wash bass, drain. Mix flour, cornmeal, salt, pepper & paprika. Dip fish into cornmeal mixture. Place in single layer in a greased baking dish. Top with bacon. Bake at 425 degrees for 20 minutes, or untill fish is tender & bacon is brown.

(Optional: thin sliced onions may be baked around fish.)
